<p>Phoenix &#8211; For the second consecutive year, CIGNA HealthCare of Arizona and the American Diabetes Association (ADA) are teaming up to combat diabetes.  “Step Out: Walk to Fight Diabetes” is the ADA’s premier walking event to raise funds for diabetes research, education and advocacy.</p>
<p>Kurt Weimer, president and general manager of CIGNA HealthCare of Arizona, will once again serve as this year’s corporate chairman.</p>

<p>Cheesy Pesto Stuffed Mushrooms &#8211; 4g Carbs</p>
<p>Yield: 6 Servings</p>
<p>14 oz large stuffing mushrooms (approximately 16)<br />
3/4 cup packed basil leaves<br />
1-1/2 tablespoons olive oil<br />
1-1/2 tablespoons toasted pine nuts<br />
1 tablespoon grated Parmesan cheese<br />
1/2 teaspoon minced garlic<br />
2 tablespoons chicken stock or water<br />
1/4 cup 5% ricotta cheese</p>
<p>Preheat oven to 425 degrees F. Spray a baking sheet with<br />
vegetable pan spray.</p>
<p>Wipe mushrooms clean and gently remove stems; reserve for another purpose. Put caps on baking sheet. </p>
<p>Put basil, olive oil, pine nuts, Parmesan and garlic in food processor; process until finely chopped, scraping down sides of bowl once. Add stock through the feed tube and process until smooth. Add ricotta and process until mixed.</p>
<p>Divide mixture evenly among mushroom caps. Bake for 10 to 15 minutes or until hot.</p>

<p>PHOENIX Arizona — On Saturday, April 26, 2008, the American Diabetes Association will once again host the free Diabetes Expo—an annual, one-day event showcasing the latest products and services for people affected by diabetes. This highly interactive <em><strong><a href="http://www.evliving.com/wellness.php?action=fullnews&amp;id=9603" title="Phoenix Diabetes Expo">Phoenix Diabetes Expo</a></strong></em> event includes activities for people of all ages, including a fun Youth Zone with exciting activities and information for children with diabetes and their families. The Diabetes Expo also provides the public with a unique opportunity to talk with health care experts and obtain important medical and nutrition information.</p>
<p>&#8220;If you or a loved one has diabetes – or is at high risk of developing the disease – Diabetes Expo provides a fun, relaxed environment to learn a great deal about the important aspects of prevention and management of diabetes and its serious complications,&#8221; said Howard Shulman, DO, FACP, FACOI, Diabetes Expo Chair. “The Diabetes Expo is for all people affected by diabetes, as well as anyone interested in healthy eating and active living.”</p>
<p>Diabetes is the nation&#8217;s fifth deadliest disease, and it has no cure. In 2005, there were approximately 469,000 residents of Arizona who self-identified as having diabetes, nearly 7.5 percent of the total population (Behavior Risk Factor Surveillance Survey, 2005). Diabetes can lead to serious complications and premature death, but people with diabetes can take steps to manage the disease and lower the risk of complications. Early diagnosis and treatment of diabetes is critical. Unfortunately, many people living with diabetes do not even know it.</p>
<p>More than 75 exhibitors are participating in the 12th annual ADA Diabetes Expo in Phoenix, which will be held Saturday, April 26 from 8:30 a.m. to 3 p.m., at the Phoenix Convention Center, Halls F &amp; G (33 S. Third St. in Phoenix, Arizona 85004). Admission is Free. <p>Preheat oven to 400 degrees F (200 degrees C). Line a medium baking dish with aluminum foil. Lightly grease foil.With a mortar and pestle, grind together the garlic, cayenne, and olive oil. Mix into a thick paste with the mustard, lime juice, salt, and pepper. Place the salmon fillets in the prepared baking dish, and coat with the paste mixture. Bake salmon 25 minutes in the preheated oven, or until fish is easily flaked with a fork.</p>

<p>An international team that included scientists from the National Human Genome Research Institute (NHGRI), part of the National Institutes of Health (NIH), today reported it has identified six more genetic variants involved in type 2 diabetes, boosting to 16 the total number of genetic risk factors associated with increased risk of the disease. None of the genetic variants uncovered by the new study had previously been suspected of playing a role in type 2 diabetes. Intriguingly, the new variant most strongly associated with type 2 diabetes also was recently implicated in a very different condition: prostate cancer.The unprecedented analysis, published today in the advance online edition of Nature Genetics, combined genetic data from more than 70,000 people. <p>“None of the genes we have found was previously on the radar screen of diabetes researchers,” said one of the paper’s senior authors, Mark McCarthy, M.D., of the University of Oxford in England. “Each of these genes, therefore, provides new clues to the processes that go wrong when diabetes develops, and each provides an opportunity for the generation of new approaches for treating or preventing this condition.”</p>

<p>a.. 1 med zucchini, cut into bite-size pieces<br />
b.. 1 med summer squash, cut into bite-size pieces<br />
c.. 1 med red bell pepper, cut into bite-size pieces<br />
d.. 1 med yellow bell pepper, cut into bite-size pieces<br />
e.. 1 lb fresh asparagus, cut into bite-size pieces<br />
f.. 1 red onion, chopped<br />
g.. 3 Tbsp extra virgin olive oil<br />
h.. 1 tsp salt<br />
i.. ½ tsp black pepper</p>
<p>1. Preheat the oven to 450°F. Place the zucchini, squash, bell peppers, asparagus, and onion in a large roasting pan, and toss with the oil, salt, and black pepper. Spread in a single layer.</p>
<p>2. Roast for 30 minutes, stirring occasionally, until the vegetables are lightly browned and tender.</p>
