Apple Brownies
3 cups all-purpose flour
1 tsp. baking soda
1 tsp. salt
1 tsp. ground cinnamon
1 1/4 cups vegetable oil
3 large eggs
2 cups granulated sugar
2 tsp. vanilla extract
3 cups Granny Smith apples (about 1 pound), peeled and chopped
1 cup chopped walnuts
3/4 cup raisins (optional)
1. Heat oven to 350°F. Grease a 15 1/2×10 1/2×1″ jelly roll pan.
2. Mix flour, baking soda, salt and cinnamon in a large bowl.
3. Whisk oil and eggs in another large bowl until blended and smooth.
Stir in sugar and vanilla.
4. Stir in flour mixture until blended. Stir in apples, nuts and
raisins, if using (mixture will be very stiff). Spread evenly in
prepared pan.
5. Bake 40-45 minutes until top is golden and a pick inserted in
center comes out clean.
6. Let cool completely on wire rack. Cut in 40 squares.
