Pork Adobo
1/2 lb. pork liempo, cut into 1″ cubes
1/4 cup vinegar
2 TB soy sauce
3 cups water
1/1/2 head garlic, chopped
1 tsp. cracked peppercorns
2 bay leaves
1 TB cooking oil
After washing the pork, Add to a bowl; the pork, soy sauce, vinegar, 3/4 of the garlic, peppercorns and bay leaves. Mix and marinate for 20 to 30 minutes.
Put the mixture in a sauce pan and cook slightly covered, adding water until desired tenderness is achieved.
Add some salt to taste. When the meat is tender, in a separate pan, brown the rest of the garlic in cooking oil. Strain the sauce off the pork and add the pork in with the garlic.
Fry until desired crispiness. Pour in the sauce and simmer for about 3 minutes.
Serves 3 to 4.
