Soup Recipe – Amish Chicken Noodle Soup
4 lb. chicken
3 quart cold water
1 onion, sliced
1 carrot, peeled and sliced
1 bay leaf
1 tsp. parsley
Salt and ground black pepper
Wash and clean chicken carefully; cut in pieces. Cover with the cold
water.
Add the vegetables and seasonings and let simmer for 3 hours or
until chicken is tender. Skim off fat.
Remove the chicken, Set aisde to cool. When cool, remove and chop the
chicken and return to the pot. Discard skin and bones.
Add add 2 cups of noodles to the pot and cook 15 minutes or until al denté.
