FRUIT CAKE COOKIES

Fruitcake seems to be among the most hated gifts of all at holiday time but there are still plenty of people trading fruitcake recipes so there must be some demand for this holiday classic.

In case you don’t want the full fruit cake experience but crave a little taste, we bring you this simple recipe for fruitcake cookies to whet your appetite or to serve your guests.

FRUIT CAKE COOKIES RECIPE

• 1 c. brown sugar
• 2 sticks butter
• 3 eggs
• 1 tsp. soda
• 2 tablespoons vanilla
• 6 c. pecans, chopped
• 3 c. sifted cake flour
• 1 lb. candied pineapple
• 1 lb. candied cherries
• 1 lb. pitted chopped dates
• 12 oz. white raisins

Add first three ingredients then add a little bit at a time. Drop by teaspoon on greased cookie sheet. Bake at 300 degrees for 20 minutes. Cool before storing.
