For the November 1, 2008 Carnival of the Recipes, the theme is Healthy Recipes and Oatmeal Recipes and the Recipe Carnival will be hosted at This Mama Cooks on a Diet. The following Chocolate oatmeal cookie recipe is submitted for this week’s carnival.

CHOCOLATE OATMEAL CHIPPERS

1 1/4 c. all-purpose flour
1/2 c. Nestle’s cocoa
1 tsp. baking soda
1/2 tsp. salt
1 c. (2 sticks) butter, softened
1 c. firmly packed brown sugar
1/2 c. sugar
1 tsp. vanilla extract
2 eggs
1 lg. pkg. peanut butter chips
1 3/4 c. quick or old-fashioned oats, uncooked
1 c. chopped walnuts (optional)

Preheat oven to 350 degrees. In small bowl, combine flour, Nestle’s cocoa, baking soda and salt; set aside. In large mixer bowl, beat butter, brown sugar, sugar and vanilla extract until creamy. Add eggs, one at a time, beating well after each addition. Gradually beat in flour mixture. Stir in peanut butter chips, oats and walnuts. Drop by slightly rounded measuring tablespoonfuls onto ungreased cookie sheets.

Bake 9-10 minutes, just until edges are browned. Let stand 2 minutes before removing from cookie sheets; cool completely. Makes about 4 dozen 3-inch cookies.
